recipe: grilled peach crostini

Peaches are one of my favorite fruits to enjoy during the summer months. Now that summer is coming to a close, sigh, I’m trying to enjoy my favorite fruits for a little bit longer. This grilled peach crostini is one of the best appetizers ever. I think there can be a few different variations but this one is my favorite. It’s fresh and the flavor combinations are so good!
Cut a peach, slice some bread and brush both with some olive oil.
Grill on each side for about 2 minutes, depending on how hot the fire is. Mine was a little hot hence the couple burned pieces.
Spread some basil pesto onto the slices of bread. If you’re in a time crunch buy premade. 
Add some goat cheese and top with grilled peaches! Tada!

Grilled Peach Crostini makes about 10 pieces with 1 peach-good for 5 people

INGREDIENTS
1 baguette
1 peach
1/4 cup fresh pesto
1/2 log of goat cheese

DIRECTIONS
Slice however many pieces of bread you’d like. Cut 10 peach slices. Brush olive oil on each side of bread, and on each side of peach. Grill 2-5 minutes per side, depending on strength of fire.

Spread each piece of bread with a little bit of pesto. Top with goat cheese and then grilled peach.
