A 15 Minute Summer Pasta Recipe You Have to Try- M Loves M @marmar

I made this recipe a few months back and loved it so much I knew I had to remake it and post about it. This pasta is not your average recipe since we’re replacing wheat pasta with zucchini noodles and it’s a chilled recipe. It’s so perfect for summer though, especially on a hot summer night! I’ve come to the conclusion that this is 15 minute summer pasta recipe you have to try!

prepare your zucchini pasta with two large zucchini squash and a spiralizer my favorite spiralizer- the one that has the best reviews too!

I started out by spiralizing {on the medium blade} my zucchini to create the perfect noodle size and shape for your pasta. I usually do one spiralized zucchini for one serving, so if Matthew is having some, I’ll spiralize two zucchinis. We have this spiralizer by the way. It had the best reviews on Amazon and I like that there are 4 blades.

Sautee your shrimp with 1 tsp of chili powder until pink on both sides- about 5 minutes!

Top your pasta with pesto, pine nuts & fresh basil. I also like to add grated parmesan on top!

Voilé there you have it;  a quick, easy and seriously delicious summer recipe you’ll love for lunch or dinner. I love the flavor the pesto adds to the zucchini and the fresh crunch of the noodles. Like I said, it’s not your average pasta recipe but it’s oh so good.

Pesto Zucchini Noodles with Spicy Shrimp

makes 2 servings

INGREDIENTS

2 zucchinis

1 pound of fresh shrimp- about 16 shrimp, defrosted if frozen

olive oil

1 tsp of chili powder

1/4 cup pesto sauce

pine nuts, lightly toasted

fresh basil

parmesan cheese {optional}

DIRECTIONS

Toss shrimp with a drizzle of olive oil and chili powder. Saute in a medium skillet over medium heat until shrimp is pink on both sides, about 5 minutes.

Meanwhile, spiralize zucchini into a big bowl. Toss with pesto sauce. Top with cooked shrimp, toasted pine nuts, torn basil leaves, and fresh parmesan {optional}.
