Hi ladies! I hope you had a nice weekend. Now that July is in full-swing it really feels like summer around here. Which is why I’m excited to share my new favorite summer recipe. I’ll be honest with you…normally I’m not a big spinach salad fan. I know it’s good for you and I don’t mind it steamed or in smoothies, but in salad form, it’s not my favorite. Or so I thought! My mother in law made this salad for the 4th of July and I was blown away. It tasted absolutely amazing and we all loved it so much {Augustine included!} that I made it again the next night. I think this is probably the best spinach salad recipe, so even if you’re not the biggest spinach fan, give it a try. We’re planning on making this salad all summer long!

On our way home from the airport the other day we stopped at Mendocino Farms to grab a quick dinner and I had the best salad there. I always love their food, but this salad really blew me out of the water! So I just had to make a copycat vineyard salad recipe inspired by Mendocino Farms! I hope you love it as much as I do! It would be such a great dish to make and bring to a holiday potluck, or even to serve at Thanksgiving!

One of our favorite summer activities is going to the farmer’s market and picking out fresh produce for the week. We love grabbing bunches of fresh herbs and colorful veggies, usually with our little helper having a nibble along the way! At the end of the week, I like to throw together easy summer salads and pastas with whatever we have left in the fridge. The other day I made the yummiest pasta salad and I’m regretting I didn’t have a picnic to go to immediately after! This easy summer pasta salad recipe would be perfect for any summer get-togethers, even the 4th of July! I think what I love most about it is the taste of the balsamic-glazed zucchinis, with the salty asiago cheese, and the lemon basil vinaigrette. It’s such a refreshing combo and just screams summer.
