Healthy, Gluten-Free Granola

Servings 6 cups

Ingredients

  • 1/4 cup ground flax seeds
  • 3/4 cup almond meal
  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds
  • 1 cup slivered almonds
  • 1 cup walnuts
  • 1 1/2 cups shredded coconut
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves, 1/4 tsp ginger optional
  • 1/2 tsp sea salt
  • 1/4 tsp baking soda
  • 1/2 cup coconut oil
  • 1/4 cup raw honey
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat oven to 250 degrees.
  2. Mix all the dry ingredients together and set aside.
  3. Mix all of the wet ingredients together and add to dry ingredients.
  4. Mix well and spread out onto a parchment-lined baking sheet.
  5. Cook for 1 hour, mixing in between at the 30-minute mark. The granola should be lightly toasted.

Recipe Notes

optional: after removing from the oven, add 1/4 cup unsweetened fruit like blueberries and cranberries
