Avocado and Mint Greek Salad

Ingredients

  • 2 Persian cucumbers quartered
  • 1 avocado diced
  • 1 radish thinly sliced
  • 1/3 cup sundried tomatoes chopped
  • ½ cup Kalamata olive halved
  • 2 oz feta cheese crumbled
  • ¼ red onion chopped
  • 2 scallions whites and light greens thinly sliced
  • 2 springs of mint chopped
  • 2 springs of dill minced
  • 1-2 Tbl Lemon Olive Oil Dressing recipe below
  • salt and pepper
  • Za'atar spice* optional

Instructions

  1. Add veggies and herbs to bowl and mix gently with 1-2 Tablespoons of lemon olive oil dressing. Add salt and pepper, to taste and sprinkle Za'atar on top.

Recipe Notes

*You can make your own Za'atar by combining 1 Tbsp. chopped fresh oregano, 1 Tbsp. sumac, 1 Tbsp. ground cumin, and 1 Tbsp. sesame seeds. Stir in 1 tsp. kosher salt and 1 tsp. freshly ground black pepper. *makes about 1/4 cup, so save the rest!
