When the temperatures outside heat up, the last thing you want is a hot kitchen! My meal prepping takes a serious hit in the summer because I just can’t bring myself to stand over a hot stove on sweltering days. This summer I decided enough is enough! I’ve been trying tons of no heat recipes that are more preparing than cooking. Seriously, no ovens or stoves required! I’m sharing ten of my favorite no heat recipes, including this Avocado and Mint Greek Salad, so you can stay cool and well-fed this summer.

Avocado and Mint Greek Salad
Course: Salad
Cuisine: Mediterranean
Servings: 4 servings
  • 2 Persian cucumbers quartered
  • 1 avocado diced
  • 1 radish thinly sliced
  • 1/3 cup sundried tomatoes chopped
  • ½ cup Kalamata olive halved
  • 2 oz feta cheese crumbled
  • ¼ red onion chopped
  • 2 scallions whites and light greens thinly sliced
  • 2 springs of mint chopped
  • 2 springs of dill minced
  • 1-2 Tbl Lemon Olive Oil Dressing recipe below
  • salt and pepper
  • Za'atar spice* optional
  1. Add veggies and herbs to bowl and mix gently with 1-2 Tablespoons of lemon olive oil dressing. Add salt and pepper, to taste and sprinkle Za'atar on top.

Recipe Notes

*You can make your own Za'atar by combining 1 Tbsp. chopped fresh oregano, 1 Tbsp. sumac, 1 Tbsp. ground cumin, and 1 Tbsp. sesame seeds. Stir in 1 tsp. kosher salt and 1 tsp. freshly ground black pepper. *makes about 1/4 cup, so save the rest! 



Easy Lemon Olive Oil Dressing
  • 1 tbsp lemon juice
  • 1 tbsp red wine vinegar
  • 4 tbsp extra virgin olive oil
  • salt and pepper
  1. Add lemon juice and vinegar to bowl and slowly drizzle in olive oil while whisking constantly. Add salt and pepper to taste.
