Happy Cinco de Mayo! I know things probably aren’t feeling very fun or festive right now, and while I would love to go sit in an actual Mexican restaurant today, we’re going to be celebrating at home. What I love about all of the recipes in this Cinco de May recipe roundup, is that they are so easy and delicious. Most are pretty healthy too, even the margarita! These recipes are my go-to Mexican recipes, but I’ve heard such amazing things about this cookbook that I think I’ll have to pick it up and try some new ones. Our family loves Mexican food, especially Augustine. He’s always wanting to “sit taco,” a phrase he made up about a year and a half ago!
I created this recipe when Trader Joe’s sold out of my favorite frozen black bean taquitos. It’s not quite as simple as microwaving the frozen version, but they’re even tastier!
Healthy, fresh, and basically summertime on a plate! These are so yummy, and a great way to sneak in some veggies!
Much healthier and tastier than a pre-mixed margarita. Although, those do the trick too! By the way, are you salt or no salt margarita girl?
These breakfast burritos are super easy to meal prep but they make a great weeknight dinner too!
