Ingredients

  • 2 sweet potatoes
  • 2 teaspoons melted coconut oil
  • 4 cups mixed greens
  • 1 apple diced
  • 1/4 cup goat cheese crumbled
  • 1 avocado diced
  • 1/4 cup toasted raw sunflower seeds
  • 1 tablespoon minced dill

Instructions

  1. Preheat the oven to 425 degrees F. Peel and cube the sweet potatoes into 1/2 inch pieces. Add to a large sheet pan and toss with the melted coconut oil and a pinch of salt. You can also add a little sprinkle of cinnamon which is so good! Spread out to arrange in an even layer. Cook, flipping every 10-15 minutes cooking for a total of 25-35 minutes. Set aside to cool while making salad.
  2. Mix salad with diced apple, goat cheese, avocado, toasted sunflower seeds, and minced dill. Mix with dressing and top with roasted sweet potatoes. You can mix it all together if you like, but I prefer it when the sweet potatoes still hold a little bit of their structure.

Recipe Notes

For the toasted sunflower seeds, you can dry toast them in a pan on over medium heat for about 3 minutes until they smell fragrant and lightly browned.
