I am always looking for a new easy weeknight meal idea to make for my family and I have to say this salad has become our go-to these past few weeks. We made it a bunch over the holidays on the days we were trying to eat healthy, and sure enough I’ve been craving it in January! I feel like it has such a yummy combo of ingredients and with the dressing, it honestly tastes like one of those $15 restaurant salads! So crave-worthy but good of you!

Winter Salad with Sweet Potatoes, Apples, and Goat Cheese

Ingredients
  • 2 sweet potatoes
  • 2 teaspoons melted coconut oil
  • 4 cups mixed greens
  • 1 apple diced
  • 1/4 cup goat cheese crumbled
  • 1 avocado diced
  • 1/4 cup toasted raw sunflower seeds
  • 1 tablespoon minced dill
Instructions
  1. Preheat the oven to 425 degrees F. Peel and cube the sweet potatoes into 1/2 inch pieces. Add to a large sheet pan and toss with the melted coconut oil and a pinch of salt.You can also add a little sprinkle of cinnamon which is so good! Spread out to arrange in an even layer. Cook, flipping every 10-15 minutes cooking for a total of 25-35 minutes. Set aside to cool while making salad.
  2. Mix salad with diced apple, goat cheese, avocado, toasted sunflower seeds, and minced dill. Mix with dressing and top with roasted sweet potatoes. You can mix it all together if you like, but I prefer it when the sweet potatoes still hold a little bit of their structure.
Recipe Notes

For the toasted sunflower seeds, you can dry toast them in a pan on over medium heat for about 3 minutes until they smell fragrant and lightly browned.

We made this salad over the holidays and agreed it’s one of the best we’ve had recently! It honestly tastes like a salad you’d get at a restaurant. You know the salads that are sooo expensive, but so good! Well this one was very affordable to make at home lol! I have a couple of thoughts as to why this salad is so amazing {one key combo and one unexpected addition!}. The combination of the avocado and the goat cheese makes it super creamy.
