Happy Saturday everyone!! My friend Kelly LeVeque, nutritionist and wellness expert, is back talking Pregnancy Superfoods- Eggs! She’s also sharing a yummy, and incredibly easy, recipe for Bulletproof Ice Cream that you all can enjoy this summer, pregnant or not. I’ve been having major ice cream cravings these days, probably because it’s been in the 80s and 90s…by the beach! I have a feeling I’ll be making this ice cream all summer long. Good thing it’s healthy, right?

PREGNANCY SUPERFOOD #2: EGGS

One egg yolk contains 13 essential nutrients, which makes it a superfood for you and your baby. The yolk is rich in B Vitamins, Vitamin A, E, and Selenium – all of which are important for vital cell functions and fetal development. Egg yolks provide our body with the essential fatty acid precursors and healthy cholesterol to balance hormones naturally. Egg yolks are loaded with choline, a vital micronutrient that helps the body absorb fat used to form DNA and cell structures. Naturally found in breast milk, choline delivers neurotransmitters essential for a baby’s brain health and development. One such neurotransmitter is acetylcholine, used for healthy nerve and muscle function. Studies have confirmed that choline also improves cognitive function and is especially important for the growth of a fetus’s brain, nerve channels and cells. A bonus, choline has also been shown to increase dopamine levels – yes, egg yolks can increase your happiness!

BULLETPROOF ICE CREAM

INGREDIENTS

4 egg yolks

4 whole eggs

1 cup of unsalted butter

1 cup of coconut oil

1 tsp ground vanilla

1/2 tsp apple cider vinegar

1 tbsp MCT oil

1 cup of water

Stevia (optional)

Cacao nibs to add on top

DIRECTIONS

Blend all ingredients in a high-powered blender and pour into a covered container, and then freeze.
