Roasted Peach and Vanilla Cream Parfait

roasted peach and vanilla whipped cream parfait dessert recipe- so easy and delicious!

Summer is one of my favorite seasons for dessert because of all the fresh fruit. The other week we had friends over for an impromptu dinner party and I was trying to think of an easy dessert that wouldn’t take long to put together. I had just bought these fresh peaches at the farmer’s market so I ended up with making this Roasted Peach and Vanilla Cream Parfait. It was absolutely perfect and so yummy after a grilled bbq meal! This summer dessert is incredibly easy and looks quite impressive too. I made my own granola but store bought is great in a pinch!

easy summer dessert with peaches a great semi-homemade summer dessert with roasted peaches! This is so easy to put together and will impress your friends and family!

makes 4 servings

4 peaches, pitted and sliced

2 tablespoons brown sugar

1 cup cold heavy whipping cream

1 Tablespoon sugar

1 teaspoon pure vanilla extract

granola {I’ve been making this recipe lately!}

mint leaves

Preheat oven to 425 degrees. Toss peaches with brown sugar sugar on a parchment-lined baking sheet. Roast, tossing once, until the peaches are juicy but still have their shape, about 5-8 minutes. Let cool slightly.

Add heavy cream to a mixer fitted with the whisk attachment. Whisk on high speed, and when it starts to thicken add the 1 tablespoon of sugar and the vanilla extract. Continue to beat until stiff peaks form. Make sure not to overbeat!

Just before serving, assemble parfaits by spooning alternating layers of vanilla cream, roasted strawberries, and granola into 8 oz glasses or jars, top with mint leaves.

So easy right? I think this would be great with other summer fruits too, just make sure to adjust the baking time accordingly!

You should try this after a grilled pizza dinner!

  • Oh my gosh this sounds amazing!! My sweet tooth is definitely speaking up, asking me to pin this! 😉 Also I feel like it’s nice for summer because it’s fruit-based, somewhat light, and small. The one good thing about this hot weather is I tend to crave stuff like German chocolate cake and almond fudge a little less than usual lol

    • I have SUCH a chocolate sweet tooth but sometimes fruit desserts sound absolutely perfect!

  • This looks and sounds amazing!! I’ve never tried roasting peaches, but as soon as we get local ones in the Toronto area, I’m going to give it a go. My go-to breakfast is always Greek yogurt, homemade granola, fresh berries, frozen peaches and a sprinkle of cinnamon. It’s such a good combination, and I love that your recipe is great for dessert!

    Something About That

    • yum! That sounds amazing Jackie!! You totally have me craving breakfast right now 🙂

  • I MUST make this! Looks so tasty!

P.S. Obsessed with those glasses, I’m pretty sure they are from Anthropologie because I’ve had my eye on them 😉

    • yes!! Anthro glasses 🙂 Aren’t they cute? My mother-in-law got them for me one year for my bday!!
