Summer is drawing to a close so I’m trying to take advantage of all my favorite fresh summer fruits while I still can. My mom told me about this incredible {and easy!} dessert she and my Dad had at their friend’s house the other week, VANILLA ROASTED PEACHES WITH ICE CREAM. It sounded so good that I had to try it! I knew it would be good but I wasn’t expecting to me as blown away with it as I was. This dessert is soo easy but it’s incredible! The flavor is amazing that I can totally see myself craving this over chocolate one night. I know. I know. That’s kind of unheard of for me, but it’s true. This dessert yummy and will completely satisfy your sweet tooth, while still remaining somewhat healthy. The warm peaches are like a bite of summer too! You seriously have to try it!

Vanilla Roasted Peaches with Ice Cream adapted slightly from Martha Stewart
makes 4 servings


INGREDIENTS
2 Tablespoons unsalted butter, melted
2 Tablespoons fresh lemon juice {from 1 lemon}
1.5 Tablespoons sugar
1 vanilla bean, halved and scraped, or 1 teaspoon pure vanilla extract
4 firm, ripe peaches, halved and pitted
vanilla ice cream
berries, optional

DIRECTIONS
Preheat the oven to 400 degrees. In a large, shallow baking disk, combine butter, lemon juice, sugar, and vanilla bean {seeds and pod}. Add peaches, and turn to coat with butter mixture. Arrange, cut side down, in a single layer.

Roast until the peaches are tender and cooking liquid is syrupy, about 15 to 25 minutes, brushing with cooking liquid halfway through. Serve peaches warm or at room temperature with ice cream and berries. Drizzle with the cooking liquid. If the liquid at the bottom of the baking dish is too thick to drizzle, whisk in 1 to 2 Tablespoons warm water.

Are there any desserts that you’re going to miss come fall? I’m going to be sad to say goodbye to my favorite s’mores. I know I can have them any time of year but they’re not quite the same unless you’re spending the evening outside, relaxing after a beach day, and roasting marshmallows over a big bonfire.  Sigh that is something I will most certainly miss!
