Today’s recipe comes from my mixologist husband. Matthew is always a fan of trying new cocktail recipes, especially ones that pass my test. As some of you might know I’m not a big drinker. A glass of wine is pretty much all I can do, or a celebratory champagne toast. Cocktails? They have to be pretty specific. Not too sweet and definitely not too strong. Since Matthew’s latest concoction passed my test, I had to share. It’s a spin on a classic Moscow Mule but with cucumber and mint. It’s such a refreshing drink, perfect for a warm, summer night! It now competes with my longstanding favorite, the mojito!
Cucumber Mint Moscow Mule
makes 1 cocktail
INGREDIENTS
2oz vodka
one lime
four mint leaves
two 1/4 inch slices of cucumber, peeled
4-6 oz of ginger beer
DIRECTIONS
In a shaker, muddle slices of cucumber with juice from one lime. Add vodka, mint leaves, and a couple handfuls of ice. Shake for about 20 seconds and pour into a glass filled with ice. Copper mugs are traditionally used for Moscow Mules, but they’re not completely necessary. Top with ginger beer and garnish with a slice of cucumber, lime, and a sprig of mint.
