I’m a huge fan of Cinco de Mayo because I love Mexican food! My guilty pleasure are these black bean and mushroom taquitos. If I could eat them every single night, I totally would! (Don’t judge!) Tonight I’m not doing much, mainly because I’m going to have a crazy busy day. I’ll probably pick up something quick and easy {veggie burrito with a side of chips} but if I could plan an ideal menu, it would go something like this…For starters I’d make up this fresh Guacamole with Mango and Dried Goji Berries. It sounds so flavorful and I’d love the heat of the jalapeno! Somehow, in recent years, my heat tolerance has gone up! {Matthew is happy about this!}
I’d be sipping on these Pink Grapefruit Margaritas, preferably in an embroidered dress outside on our patio. The color of the drink is so pretty and I’d have to make a pitcher so Matthew and I could each have a couple. It would be fun to have some of the neighbors over too!
Of course I’d make these Black Bean and Mushroom Taquitos for the main meal, and for dessert I wouldn’t be able to resist these Churro Balls with Dulce de Leche Dipping Sauce. A meal like this would make me one happy girl!
