Summer is one of my favorite seasons for dessert because of all the fresh fruit. The other week we had friends over for an impromptu dinner party and I was trying to think of an easy dessert that wouldn’t take long to put together. I had just bought these fresh peaches at the farmer’s market so I ended up with making this Roasted Peach and Vanilla Cream Parfait. It was absolutely perfect and so yummy after a grilled bbq meal! This summer dessert is incredibly easy and looks quite impressive too. I made my own granola but store bought is great in a pinch!
ROASTED PEACH AND VANILLA CREAM PARFAIT
makes 4 servings
INGREDIENTS
4 peaches, pitted and sliced
2 tablespoons brown sugar
1 cup cold heavy whipping cream
1 Tablespoon sugar
1 teaspoon pure vanilla extract
granola {I’ve been making this recipe lately!}
mint leaves
DIRECTIONS
Preheat oven to 425 degrees. Toss peaches with brown sugar sugar on a parchment-lined baking sheet. Roast, tossing once, until the peaches are juicy but still have their shape, about 5-8 minutes. Let cool slightly.
Add heavy cream to a mixer fitted with the whisk attachment. Whisk on high speed, and when it starts to thicken add the 1 tablespoon of sugar and the vanilla extract. Continue to beat until stiff peaks form. Make sure not to overbeat!
Just before serving, assemble parfaits by spooning alternating layers of vanilla cream, roasted strawberries, and granola into 8 oz glasses or jars, top with mint leaves.
So easy right? I think this would be great with other summer fruits too, just make sure to adjust the baking time accordingly!
You should try this after a grilled pizza dinner!
