Happy Easter everyone! I hope you’re enjoying this wonderful weekend. We’re having family over later today and I’m making this gluten-free carrot cake which I’m excited about! Our weather this weekend has been so glorious that we’re planning on eating outside. I hope this means we’re officially into spring over here!

TUESDAY- Braised Pork Tamale Bowls with Polenta from this cookbook
WEDNESDAY- BBQ Chicken Salad with Avocado Ranch Dressing also from this cookbook
THURSDAY- Dinner with friends
FRIDAY- Caprese Bake with Meatballs– these meatballs are always a hit! I made this caprese bake before and loved how easy it was.
SATURDAY- Korean Beef Bowls with Spinach, Mushrooms and Yum Yum Sauce
SUNDAY- keeping dinner simple tonight with leftovers

These ballet flats from Margaux are still favorites of mine. I think this is my 4th year with them and they still look so good. They’re pricy but I feel like they’re such good quality and it’s a pair you’ll wear more often than you think.

ON MY MIND
We had a big tooth day this week! The big kids had appointments to see the dentist on the same day baby Beatrice’s first bottom left tooth popped up. Later that same day, I chipped one of my bottom teeth. This hadn’t happened to me before so it’s been a weird few days because I can’t help but notice the roughness where the chip is. I have my own appointment next week to see what my options are but thankfully it’s not noticeable at all, just to me.
Augustine finished his Math 1 curriculum from The Good and the Beautiful and I am so proud of him! He’s worked so hard this year and has learned so much. I’m most happy with the fact that he’s finishing it super excited to start Math 2. He’s really enjoyed doing math!
Corinna has been such a sweet helper to me this week! From making granola bars together to planting in the garden, I’m so thankful for her helpful spirit. She couldn’t wait to make the carrot cake together too!
We’re all looking forward to lots more time outdoors now that the weather has warmed up. I’m hoping to plant some seeds this week too (better late than never) which I think will be a fun activity for the kids too!
