I hope you all are having a nice weekend! This week we spent more time outdoors than we have all winter. The weather is warming up just enough to be outside comfortably for a few hours at a time and with the sun shining, our chilly temps are much more manageable. My hope is that we’ll be outside as much as we can all spring!

 

WHAT WE ATE

my plan is to share the meals I made the previous week, with links if possible, as some inspiration for your own menu planning.

MONDAY- Creamy Chicken Gnocchi Soup- This recipe was from the HBH Super Simple Cookbook. It was ok but not my favorite. I’d actually be more interested in trying this version on her blog which has some additions I think ours lacked.

TUESDAY- Jerk Shrimp and Mango Rice Bowls with Chocolate Caramel Banana Cream Pie for dessert – We couldn’t miss an opporutnity for pie on pi day (3.14). This pie was absolutely amazing and grain-free and refined-sugar free to boot! I highly recommend this cookbook for those of you looking for healthier dessert options that are still so satisfying! And for our Taco night we decided to mix things up with this shrimp and mango bowl that had really yummy spices!

WEDNESDAY- Gingered Apple Pork Chops with Roasted Brussels Sprouts – I had a little leftover dressing from last week’s recipe so I couldn’t resist making the brussels again!

THURSDAY- Saucy Coconut Fish Curry with Cauliflower Rice

FRIDAY- Corn Beef and Roasted Brussels Sprouts- I’m not a big corn beef person but I saw this recipe on HBH that had amazing reviews including serveral saying it’s changed people’s minds about the dish. I’m here to say it was DELICIOUS  and we’ll defnitely be making it again, and more than once a year with other cuts of meat. I’m curious to try the HBH sandwich version but we just made ours on its own with roasted brussels.

SATURDAY- Sesame Orange Chicken with Cauliflower Rice – Matthew used to be a big fan of the orange chicken from Trader Joe’s and I’m so happy to say I think we’ve found a healthier swap with this recipe from the HBH Super Simple Cookbook. The kids loved it too with white rice and it was very easy to put together. I found this very similar recipe on her blog so I might try it next time to compare!

SUNDAY- Hamburger Salad – basically a burger deconstructed without the bun. I’m making a jalapeño dressing for the salad version. For dessert I’m making these chocolate pots de creme!

I wanted to try a sourdough buttermilk pancake recipe so I made these for breakfast this morning and they were amazing! We’ll definitely be making them again.

WHAT I WORE

Cooler temperatures mean I can switch to lighter layers. This mac coat is a favorite – so chic and elevated even the simplest outfits. I got this nursing-friendly bodysuit and love how cute it is with this new pair of denim I got. I love how it hugs my postpartum tummy in! I also have this striped shirt dress that works if you’re pregnant or not.

There’s a big Friends and Family Sale at GAP right now. 40% off everything with code FRIEND. I love these jeans I just got from them. This crochet mini dress is cute, as is this puff sleeve dress. I’m hoping this dress comes back in stock because what a pretty back detail. And I’m going to peek at the kids section too because my little crew is quickly outgrowing their clothes, especially baby Beatrice. I always love Gap’s baby items because they have a lot of organic cotton and linen options. This gingham set is too cute, as is this yellow one!

ON MY MIND

Easter is right around the corner and I’m thinking about what to put in the children’s baskets. I found some cute options and shared them on InstaStories but here they are if you missed them:

I’m also in the process of putting together a Spring Style edit and I haven’t had a chance to hit publish yet but I wanted to share some of my finds. They make me so thrilled for warmer weather!

Happy Sunday everyone! I hope you’ve had a wonderful weekend. Our Saturday was very slow but it was also just what we needed. We’re in the process of transitioning out of naps which is good in one way {earlier bedtimse}, but also harder in other ways {more challenging afternoons}. And then we’re adding in the time change which was maybe not the best plan. Wish us luck this week!

WHAT WE ATE

my plan is to share the meals I made the previous week, with links if possible, as some inspiration for your own menu planning.

MONDAY- Creamy Broccoli Cheddar Soup with sourdough – we love starting our week off with a  comforting soup night. It just feels so right, especially during our cold season.

TUESDAY- Taco Skillet Bake- This was so easy and a nice mix-up from our typical taco night. We sauteed zucchini and bell peppers, added ground beef and seasonings, and then topped it with cheese and baked until bubbling. We served it with avocado, cilantro, and salsa and the kiddos dug in with tortilla chips.

WEDNESDAY- Kale and Mint Salad with Peanut Vinaigrette– This recipe is so delicious! We love the vinaigrette so much! You could serve it with shredded chicken or even sauteed shrimp.

THURSDAY- Salmon Milano with Lemon-Basil Pesto- I love an easy dinner! We just topped salmon with a lemon-basil pesto and roasted it for 12 minutes. Served with a salad, this was a healthy and easy dinner.

FRIDAY- Skinny Chicken Parmesan with Brussels Sprout Salad with Anchovy Tahini & Za’atar ChickpeasThis recipe is similar to what we made although I used almond flour and tapioca starch with parsley for the breading.  This brussels sprout salad was so yummy for the adults and I’m planning on making it again this week since I have leftovers of the tahini. The kids weren’t the biggest fans but we’ll see what they think when they try it next time.

SATURDAY- Date Night Pork Chops with Rosemary Roasted Sweet Potatoes- These pork chops are one of Matthew’s favorite meals ever! We’ve made it a handful of times. Don’t skip the fennel and lemon zest and herb salad – both are musts!

SUNDAY- Clams in White Wine with toasted bread- It will be very similar to this recipe, minus the pasta although that looks so yummy!

For breakfast one morning, I made the most delicious baked oatmeal recipe for the kids. It was inspired by this recipe I found online and I’ll definitely be making it again!

WHAT I WORE

My hair has been growing like crazy these days and I’ve been needing to keep it up and out of reach from baby Beatrice. I bought these claw clips on Amazon and love their neutral color options and the larger size. It’s been so nice to have something that easily holds all my hair.

I’ve been loving basics from PACT. Their pieces are made with organic cotton and they’ve held up so well. I got this shell in oat along with the matching joggers and cardigan.

ON MY MIND

Friday night we had a game night which was so fun! We played a few new games, Otrio and Bird Bingo. Both were so fun!

Pi Day is this week (Tuesday 3.14), so I’m planning which pie to make. Since we’re trying to be lowish carbs these days I’m looking in my Sweet Laurel cookbook for inspiration. I heard the pecan pie recipe is really good, Augustine wants pumpkin pie, I’m tempted by the s’mores pie, but Matthew is a huge fan of coconut cream. We’ll see what we decide!

I’m starting to put together a spring edit of favorites but I wanted to share some of what I’ve found on Shopbop. Looking at spring pieces makes me so excited for the warmer weather to come!

09: week in review

This weekend went by way too quickly. Yesterday I had a homeschool retreat with the moms in our co-op and it was such an encouraging day. This time of year can feel slow when it comes to homeschooling so I felt like we all left feeling excited to finish the year strong. Homeschooling is such a blessing and I’m so grateful for the opportunity to teach my kids at home. This book was one that really squashed any doubts I had, and this is another that has been very encouraging. This one too!

WHAT WE ATE

MONDAY- Kale and Quinoa Winter Salad – this was so yummy and delicious! I can’t wait to make it again. The toasted spices added such a unique element and I love that the leftovers hold for midweek lunches.

TUESDAY- Easy Italian Bean Soup– this soup was so delicious that I wrote it down for my Recipe Box. Highly recommend this soup. It’s simple but the flavor is amazing!

WEDNESDAY- Salmon Fish Taco Bowls– This recipe was so good, like a fish taco but in bowl form. It’s from this cookbook (along with the rest of the recipes for the week. We’ve loved cooking through this cookbook)

THURSDAY- Miso Broiled Halibut- from this cookbook

FRIDAY- Texas Tamale Pie- from this cookbook

SATURDAY- Spaghetti Squash Singapore Noodles- from this cookbook

SUNDAY- dinner with friends- They made the most delicious Korean Bowl with coconut rice and yum yum sauce from Half Baked Harvest Super Simple!

I’ve been loving grapefruit these days! It’s so bright and refreshing and reminds me of breakfasts growing up.

WHAT I WORE

I definitely have warm weather on my mind so I picked up this straw hat from Gigi Pip. I have one of her wool hats and love it, but I’ve had my eye on this Jolie boater hat for awhile.

For a date downtown, I wore my favorite Maylis loafers. So comfortable and they go with everything!

ON MY MIND

I got these personalized sunglasses for Corinna from Strand Up, and couldn’t resist a pair for Beatrice too. You can get matching hair clips too. These would be such a sweet addition to an Easter basket!

I’m four months postpartum and the hair shedding has unfortunately started. I’m loading up on my liquid biocell collagen though which has been so helpful in the past.

Matthew and I went on our monthly date on Friday and we checked out a newish coffee shop. It’s hard to find the time to get out just the two of us (and baby) but it’s always so worth it. Baby Beatrice slept the whole time too!

Since I have spring on my mind, I’m going to be putting together a spring style edit! I’ve already found some really cute pieces that I can’t wait to share with you, like these nude flats and this pretty swimsuit.
