Lemon Poppy Seed Cake with Mascarpone Frosting and Fresh Berries

Lemon Poppy Seed Cake with Mascarpone Frosting and Fresh Berries Recipe M Loves M @marmar
The weather this weekend was so incredibly strange! As I mentioned yesterday, we experienced rain and thunderstorms. For most months that isn’t normal weather for Los Angeles, but especially not for July! Sundays in the kitchen are my favorite, and it’s even nicer when the weather is a little gloomy. You don’t want to be outside, so staying in and baking is perfect! I decided to make a lemon poppy seed cake and add a light mascarpone frosting and berries from the farmers market. This dessert was delicious and fresh, and perfect for brightening up a rainy day! It was also Matthew’s pre-birthday cake! He keeps begging for a Mud Pie so I think I’ll make that for him for his official birthday dessert later this week.

Lemon Poppy Seed Cake with Mascarpone Frosting and Fresh Berries

makes 1 8inch cake

INGREDIENTS
for cake
butter, for greasing pan
1 3/4 cup all-purpose flour, plus some for pan
zest of 2 lemonds
3/4 cup sugar
1/2 cup buttermilk
3 Tablespoons lemon juice
3 large eggs
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon fine sea salt
2/3 cup extra-virgin olive oil
1 Tablespoon poppy seeds
1 cup fresh berries, like raspberries, blueberries and blackberries

DIRECTIONS
Heat oven to 350 degrees. Butter and flour an 8-inch cake pan.

In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.

In a bowl of a standing mixer combine lemon zest and sugar, and rub with your fingers until it looks like wet sand. Add the whisk attachment and with the mixer on medium speed, whisk in the buttermilk, lemon juice, and eggs until the color turns light yellow. Add the dry ingredients into the batter until just incorporated. Then with the mixer still on medium, whisk in the oil and poppy seeds.

Pour batter into the pan and bake for about 45 minutes, until a toothpick comes out clean. Let cool in pan until warm and then turn out onto a baking rack set over a rimmed baking sheet. Turn cake right side up.

Once cool, slice cake horizontally in half with a serrated knife. Spread half of the mascarpone whipped cream frosting on the top of the bottom piece. Arrange berries on top, and place the top of the cake on top. Add the rest of the mascarpone whipped cream frosting and the berries.

Mascarpone Whipped Cream Frosting

1/4 cup granulated sugar
1/2 teaspoon vanilla extract
2 cups heavy whipping cream

DIRECTIONS
In a bowl of standing mixer fitted with a whisk attachment, mix the mascarpone, sugar and vanilla on high speed until completely blended. Then adjust the speed to low and add the whipping cream. Mix until cream is mostly incorporated. Scrape bowl and then whip on high speed until stiff peaks form, about 2-3 minutes.

Another thing I loved about this recipe was that the cake was so simple to make. I already had all of the ingredients, except for mascarpone and whipping cream for the frosting. The buttermilk is one you might not have but you can use the remainder for pancakes!
I can’t wait to make this one again!

graphic tee and jeans

red blazer with lip print tee and cropped jeans M Loves M @marmar
I saw this lip print tee during my event at J.Crew the other month and had to have it. It was actually designed by the guy who beautified that Cadillac Matthew and I shot in front of for Valentine’s Day. Gosh, that seems like so long ago now! Especially when I see photos of those bangs!
Graphic tees are so fun and it’s a classic combo with jeans. I paired the outfit with this red blazer, which picks up on the lip print on the tee, and a pair of striped wedges. This is one of those outfits that could work for an a casual lunch and errands!

I hope you all had a great weekend! I went to a really fun party on Saturday and then had a fun date night at home with Matthew. The weather was so weird this weekend. We woke up to thunder and rain on Saturday and it rained off and on throughout the day. It was nice to stay in, order thai food, and enjoy the rare cozy weather!
Sunday I did a bunch of work and then we celebrated Matthew’s birthday a little early with my parents. I’m excited because we have a fun, short little trip planned this week. Things have been so crazy busy so it will be nice to get away for a few days!
Have a great Monday everyone!

P&G Beauty Update

P&G Beauty Update M Loves M @marmar
Over the past 8 months I’ve been working with P&G to
test out their new beauty and skincare products and provide them with my
feedback. It’s been so fun and along the way I’ve tried some products I’ve
really enjoyed, and also re-discovered old favorites! This month I’m testing
out the following three products:
Herbal Essences Wild Naturals Intensive Treatment– My hair gets
really dry during the hot summer months and this treatment is supposed to help
give my hair more moisture. I’m planning on using it once a week
on Sundays, to reset my hair for the week. I find it a lot easier to stick to a schedule when I pick a specific day.
Aussie 7N1 Dry Shampoo– I’ve been a huge fan of Aussie’s
products since high school. They’re affordable, smell great, and get the job
done. The dry shampoo is great for getting back to a 1st day clean
hair look. California is in a drought so if I can cut back on washing my hair
just a little bit than that’s a good thing! I also love using dry shampoo to
give my hair a little bit of texture. I’ll spray it in after a surf spray for a
messier, chic look!
Clairol Nice ’n Easy Sun Kissed– One of my best friends has
gorgeous dark blonde hair but she wants to add a little bit of lightness to it
this summer. We’re planning a girls night with wine and pampering and we’re
thinking about using this highlighting system since it’s a more affordable way
to get sunlit locks!
If you’re interested in trying any of the above products
leave a comment below! I’ll be picking one winner to win all three!
