I hope you all are enjoying your weekend! It’s been a fun one over here. Today I had some of my Book Club girlfriends over for a pie brunch. I really want to work on my pie skills so I thought it would be a good opportunity for me to try one out. I made one from The Book on Pie (a rental from the library but I would highly recommend for anyone serious about their pie game). It was a German Chocolate Pie with a coconut and pecan topping that was so yummy. My crust wasn’t perfect but, like I said, I need the practice. I was thinking that maybe next year I should challenge myself to make a pie a month. It could be fun, don’t you think? It would be so nice next December if I felt like I knew what I was doing.

WHAT WE ATE

MONDAY- Southwestern Sweet Potato Chili- from this cookbook but this recipe on her blog is very similar.

TUESDAY- Roasted Mushroom and Onion Quesadillas- easy and delicious! We made guacamole to go with it…yum!

WEDNESDAY- Skillet Orzo with Turkey Meatballs, Green Olives and Feta– This was an easy one-pan dish, although I did make the meatballs the night before.

THURSDAY- Salmon Larb Bowl with Coconut Rice- We are all obsessed with how good this coconut rice is!

FRIDAY- Pesto Lasagna Bolognese- very similar to this recipe which has rave reviews

SATURDAY- Grilled Flank Steak with Crispy Roasted Potatoes– We made the basil vinaigrette (of course), and I topped the potatoes with a delicious mustard herb vinaigrette

SUNDAY- Chicken Parmesan Tagliatelle- from this cookbook (like most from the week to be honest)- Trying to use up some of our freezer and pantry items before heading into the new year.

WHAT I WORE

I love the look of a black turtleneck tucked into jeans, a silk skirt, or a pair of trousers. For brunch today, I wore one tucked into these pretty pants from Baybala. The quality of the pants is so good and even the kids commented on how much they liked them. They felt festive, too, in an evergreen shade.

ON MY MIND

On Monday, Tidy Style Home came to reorganize my closet and WOW I am still so beyond impressed with how they were able to rework the space. It is so incredibly organized and I just love how they maximized every inch. My biggest takeaway was how they hung up everything. I had some shelves that had tee shirts and sweaters tumbling down and matching loungewear pieces piled up. They hung everything, even grouping the matching loungewear pieces together. The sweaters are folded on the hangers in a way that prevents them from stretching out and it just makes so much sense. On the shelves they brought in my underwear and socks that were previously in my dresser and put them in woven bins. I love that I can now get completely dressed in my closet without the need to go back into my bedroom. If you’re in Boise, I highly recommend them. They have implemented systems in our kitchen that we still use 3 years later, and now I’m so happy my closet is organized as well. You can also follow them on Instagram for their tips too which I find so helpful!

In-N-Out opened in Boise this week which has been a HUGE deal! For the past few years, everyone has been counting down. I wasn’t planning on going during the opening week because I heard the lines were crazy. On opening day I had a friend wait for 5 hours! She said it was worth it, but that is just way too long for me. My friend Halley convinced me though so I joined her in line at the end of the week and luckily we didn’t have to wait more than 30 minutes. In-N-Out is so nostalgic for me because it was a special treat when we’d go on family road trips to see my grandma in northern California. I have so many memories of those meals off the I-5 with dog, and then dogs, in tow. My order is a Grilled Cheese with grilled onions and pickles. The best! I had to get fries too (with mustard) and I couldn’t resist adding in a chocolate milkshake! The kids were extremely excited, and Matthew was very jealous because he was working. We’ll have to go back again, although it might be in California next month !!

This year I have removed a lot of the typical Christmas pressure I’ve felt in previous years. We’re keeping things simple, I’m not sending cards out and I’m not doing an elaborate Advent calendar. We only give a few presents to the kids and thankfully I bought gifts in November so this has been a slow and sweet month savoring the Christmas season. I know many of us sometimes think or wish we could be doing more but it’s been good to remind myself what Christmas is truly about. Also, the stage of life we’re in sometimes dictates what we can and can’t do. Resting in that has been so freeing.

It’s been getting so cold here lately but I’m still trying to get out for afternoon walks when we can. Augustine and Corinna have found a play spot along our neighborhood creek trail and that has been filling our afternoons lately. In the right clothing, the weather is tolerable, but it still feels extra nice to walk inside a warm house after playing outside.

Happy Thanksgiving week!! This is one of our favorite weeks of the year and I am so happy it’s here. We are hosting this year for the first time and it will be so nice to celebrate with our in-town family members. My plan tonight (Saturday) is to finish this blog post and then get my giant grocery list written and organized. I know I’ll feel so much better once that is done.

WHAT WE ATE

I plan to share the meals I made the previous week, with links if possible, as some inspiration for your own menu planning. 

MONDAY- Immunity Soup – one of my friends brought this to a Mom’s Favorite Soup Night and I LOVED it. The source is random but the soup is delicious! I think I’m going to always add 10 cloves of garlic to my soups now. I mean, of course, right?

TUESDAY- Cheesy Baked Tacos

WEDNESDAY- Blackened Chicken and Sweet Potato Bowls– This was so yummy! The hot honey mustard dressing was beyond delicious!

THURSDAY- Balsamic Marinated Grilled Skirt Steak with Basil Vinaigrette– I mean a favorite is a favorite! This is going to be in our rotation from here on out, I’m sure!

FRIDAY- Pork Chops and Mac and Cheese for the Kids

SATURDAY- Spinach Pumpkin Lasagna– We made this for our friends and everyone loved it, especially the kids!

SUNDAY- Sheet Pan Salmon with Broccoli and Rice- an easy freezer/pantry go-to!

I also made these sourdough pumpkin chocolate chip cookies and they were so yummy! The recipe makes 2 dozen so I happily have some in our freezer for last-minute get-togethers or surprise treats for the kids.

We’ve been making these spiced banana pancakes this fall and they’re so delicious with the warming spices! I’ve been playing around with different combos and today I subbed in some cinnamon and nutmeg and decreased the pepper.

Turtlenecks are the perfect layering piece during winter and I’m already reaching for them. I especially love them under this Hatch dress with the v-neckline.

I got this brown quilted jacket from Jones NY and it’s such a great piece for fall. I sized up so I can wear it with light sweaters but I like the slightly oversized look.

ON MY MIND

Boise friends, you have to go to see Amber Rose for a facial. I went today and it was so amazing. I’ve been wanting to book an appointment to see Amber for at least the past year. She is so sweet, very knowledgeable, and gives the most amazing facials with really good, clean products. I can’t wait to go back to see her again.

I know I mentioned last week that Amazon Prime Video is streaming some of my favorite movies this month. I watched Oklahoma and I’m currently watching Notting Hill when I go on our elliptical. It’s been a good encouragement for me to get my workout in because I want to continue watching!

This past week (tonight excluded) I’ve been going to bed a lot earlier. It’s been so nice to get some extra sleep because we have very early risers around here. I’m looking forward to taking advantage of getting extra sleep this winter but I also want to catch up on some projects that have been neglected. I realized the other day that we never made a wedding album (from our wedding 12 years ago!). I would love to do that, along with finalizing Baby Beatrice’s Baby book and working on our yearly photo album. Basically, I’m going to be spending a lot of time on Artifact Uprising (Or Minted!). If you have a recommendation for quality photo printing, let me know!

Matthew and I are talking about planning a trip this January to break up our winter. While we haven’t had snow yet, the temperatures are definitely dropping. It will be nice to be here for the holidays, but if we can get somewhere warm for a few weeks this winter that would be amazing!

I loved how much time the kids spent outside this week! They were outside for 3 hours at least every afternoon. We’re soaking in the sunshine when it’s out. I can’t believe a year ago there was already snow on the ground. I don’t think we’ll have snow by Thanksgiving but I’m guessing we will the first week in December. We’ll see!

39: week in review

Hi friends! I hope you’re having a wonderful weekend. It truly feels like autumn here- we’ve had rain off and on all weekend and much cooler temperatures. Now that it’s October 1st I’m ready for all the fall baking. I love being in the kitchen year-round, but especially during autumn! Matthew is heading out of town tomorrow for a week-long work trip and we were talking about how maybe it’s the longest he’s been away during our whole marriage, definitely for each of the kids too. I’m so thankful that we get to spend as much time together as a family as we do, that six days seems like a long time, but it doesn’t mean we’ll miss him any less. I’m trying to plan some fun things with the children to help ease their missing Dada pain. So far, I have some yummy meals planned and sleepovers with the big kids. Maybe I’ll throw in a hot cocoa outing too! I joke with Matthew that he’s the favorite but he really is. He’s such an incredible Dad and all three of those kids, including Beatrice feel his love always. During Matthw’s last work trip, 10-month-old Baby Bea was saying “Dada Dada” at nighttime because she was noticing his absence.

MONDAY-  Rotisserie Chicken Salad– this salad is so good! It’s our second time making it and a hit each time!

TUESDAY- Sizzling Beef Bulgogi Tacos – this was such a nice change from our normal Mexican taco night. So flavorful and easy! I especially loved the iceberg slaw.

WEDNESDAY- BBQ Meatballs and Greek Salad from Simply Symon Suppers – the meatballs were ok. Not blow it out of the park amazing but they got the job done. Maybe I should have added more bbq sauce on mine. The Greek salad on the other hand was amazing and so authentic tasting. I couldn’t find the recipe online anywhere but I’ll see if I can write it out for next week. It’s all the normal players: tomato, cucumber, feta, but just classically delicious!

THURSDAY- Grilled Salmon Steaks with Bok Choy and Mustard Sauce – this was so incredibly delicious that I made a mental note to write down the mustard sauce recipe. It was amazing! I’m very excited to cook more from this cookbook now after having two very delicious meals!

FRIDAY- Neighbor PotLuck – we are blessed with the best neighbors! We had tacos, guac, corn salad, broccoli salad, and I made Mexican rice and beans.

SATURDAY- Cacio e Pepe– always trying new versions which is silly because it’s the simplest recipe ever but we liked this one a lot.

SUNDAY- Cast-Iron Smash Burgers with Fries – It’s October 1st but we still love our burger nights. Not ready to let these go just yet.


I also made this Creamy Gnocchi Soup for a friend who just had a baby, and also these Brown Butter Apple Blondie Bars. I snuck a few and they were delicious!

In honor of fall, and the start of October, I made a sourdough pumpkin loaf. I made one last year and I think they’re just too cute with the cinnamon stick sticking in as the stem. The kids ate it with apple butter for a snack yesterday.

I got bangs this week which I’m getting used to. I think I need about 1/4″ cut on them but once they’re right I think I’ll like them a lot! I just think I needed a little change and bangs feel fun for right now. (If you’re postpartum you’ve probably done the same, or thought about it!)

I have a few sweaters from Ralph Lauren that I’ve owned and worn for several years that feel just as good as new. I don’t think I can say that about a lot of brands, but I really can about RL. The quality is so good that they hold up.

My short trench coat from Everlane has been a favorite for years (remember it here?). I love their long versions too.

ON MY MIND

As I mentioned, this week will be a little different with Matthew gone. We’re going to keep busy when we can and I’m going to try to make a bunch of easy recipes. My best friend shared Caro Chambers with me and she is a recipe developer with young kids of her own. She has a Substack with lots of recipes and ones specific for those crunch-time dinner periods where you just need to get food on the table. I have several of her recipes planned that I’m excited to try out. They not only look easy but delicious as well!

Because I have a lot of fall desserts I want to make I’m trying to stay organized. Each week I’m allowing myself to bake one treat and one dessert. My hope is that I can really narrow down the things I want to make without going overboard. Treats are aimed at being healthier snacks for the kids, and the dessert is a DESSERT. One day, when I have some more time, I’ll share more of my baking adventures because it really is my favorite thing.

Matthew and I were able to get out for a sushi date yesterday which was so nice! We made a New Year’s Resolution to go on monthly dates and we’ve been so good minus a few months when my mother-in-law/babysitter extraordinaire was out of town. It’s always so nice for us to have time together just the two of us, where we can complete a conversation without interruptions and it doesn’t take 5 minutes to get in and out of the car with car seats and such.
