Happy Sunday everyone! I hope you all are enjoying the holiday weekend! Summer is unofficially here, right?? We’re planning on going for a walk along the river tomorrow and then coming back home to grill. This past week went by so fast but like I mentioned last week, our activities rapped up so now we’re officially in summer mode! Here’s a little recap of our week:

WHAT WE ATE

MONDAY- White Bean Soup with fresh Sourdough

TUESDAY- Black Bean and Sweet Potato Tacos

WEDNESDAY- Grilled Flank Steak with a Basil Vinaigrette and Herby Orzo

THURSDAY- BBQ Chicken Salad

FRIDAY- Dinner at a friend’s house- They made the yummiest fish tacos with mango salsa and black rice.

SATURDAY- Spaghetti alla Nerano

SUNDAY- Chicken Enchiladas

I made these chocolate chip cookies over the weekend and they are SO good! Mine turned out a little thinner than the photo but the flavor was so good! Perfectly crispy edges and soft chewy interior. I definitely will make them again!

Also made this delicious sourdough banana bread recipe. I’ve made it before and it’s so classic. Perfectly soft and not too sweet!

I made Alison Roman’s Coconut Cake last Sunday like I had mentioned. It was really good and not too sweet. The buttercream/cream cheese frosting reminded me of carrot cake so it would be a great alternative. And I also made her Carmelized Apple Tart to bring over to a friend’s house which was delicious too.

WHAT I WORE

I got my new boots from Margaux and they are so cute and comfortable! I love that it’s a small business and they handmake their shoes in Spain. Yes, they’re pricier but the quality is so good. I can vouch because I have a pair of their Demi flats from 3 years ago that are still going strong. The Woven mule is next on my wishlist.

We’ve been reading so many great picture books lately. It’s been a fun activity to do in the afternoons together. Here are some of our recent favorites:

One of my favorite restaurants in California had the most beautiful collection of floral plates and I’ve been wanting to build up a mismatched collection of my own. I LOVE green floral prints and found these at Zara Home that look like exactly what I want. Matthew thanks we have too many plates already but I just love the idea of using ones like these as our everyday plates. Life is too short to not eat on pretty plates right??

Beatrice got her second front tooth in this week! So thankful because it was causing her a lot of pain. She loved to be front-facing in my carrier this week. We took a nice walk to the park and she loved to watch the older two run around and go down the slide.

We went on a walk along the Boise Greenbelt this week and the water has been running so fast! It’s always such a pretty walk, especially with the blooming trees. Getting a coffee from Push & Pour before heading out is a pro move!

We’re enjoying lighter evenings these days because the sun has been setting around 9:15 pm lately. I’ve loved lighting a candle (love this one) and doing dishes/cleaning up before heading to bed. The extra 30 minutes spent cleaning is so worth it to wake up to a cleanish house.

Happy Sunday and happy Mother’s Day to all the mamas out there! I think Matthew is talking about going out for lunch which will be fun. I don’t think I’ve mentioned that my mother-in-law has been living with us, so that makes the day that much more special to be together. Missing my mom in Los Angeles though!! Gah it’s hard to spend holidays apart.

Here’s a little recap of our week:

WHAT WE ATE

MONDAY- Balsamic Grilled Skirt Steak with Charred Tomatoes– Matthew was obsessed! He said we need to make this once a week, which you know by now is a top compliment!

TUESDAY- Easy Skillet Cheesy Green Chile Enchilada Bake– I used 1 poblano instead of 2 (pre-roasting it), and it was yummy! Such an easy, crowd-pleaser.

WEDNESDAY- Chicken Tzatziki Bowls – This was the surprise favorite of the week! I love Greek food and while it’s not Matthew’s favorite, he really liked this one! Also, the kids loved the chicken that was grilled in this yummy yogurt and turmeric marinade.

THURSDAY- Crispy Oven Pork Sliders with Coleslaw Salad and homemade Hawaiian sweet rolls– You might remember we’ve made this recipe a few times. It’s one of Augustine’s favorites and always requested.

FRIDAY- Meatloaf and Potato Salad- from this cookbook. Somewhat similar to this recipe of hers but would highly recommend trying the cookbook version. Corinna is our most particular eater and she ate the whole thing up which is not typically how things go around here.

SATURDAY- Burger Night with salad and sweet potato fries

SUNDAY- Creamy Bacon and Tuscan Shrimp with fresh sourdough {from this cookbook}

WHAT I WORE

We are definitely at the end of our spring weather because the temperatures are rising fast! It seemed like our spring was so short, but we enjoyed some fun thundershowers and lightning storms this week. One day I was in a rain jacket and the next in shorts and a tee {I wear the heathered oat one all the time}. It will be interesting to see what our summer weather is like but it’s typically very hot and dry.

Margaux is one of my favorite shoe brands and I just got this Downtown Boot. I had my eye on this pair of slides and these sandals but I feel like my wardrobe is really missing a classic everyday boot and these look so perfect with the suede and stacked heel. I feel like it’s a boot I can wear any season and I love how comfortable they are.

This striped tee has held up for several years. It has a great comfortable and soft material and I can wear it year-round.

ON MY MIND

This week I took Corinna out for some special mommy/daughter time. It was so nice to catch up with her and she loved getting a special steamer latte {foamed milk with cinnamon and honey}. How cute are her little flower sunglasses?!

We spent a lot of time outside this week with picnic lunches and dinner on our patio. You really appreciate spring after a long winter!

Lots of snuggles with my tiniest girl too! How cut are those baby bell bottoms? They were a hand-me-down from a cousin and Corinna wore them too.

Hi friends! Getting this post up a little later than I would have liked, but I’m happy to be doing it. I’ve loved these weekly check-ins especially because it seems time is flying. While we had some snow this week, spring is in our future! The forecast predicts 70-degree days Easter weekend and I almost can’t believe it. It’s going to be such a nice change! I already told Matthew I plan on spending as much time outside as possible once it warms up. Playtime, reading, homeschooling, meals, all outside!

WHAT WE ATE

my plan is to share the meals I made the previous week, with links if possible, as some inspiration for your own menu planning.

MONDAY- French Lentil Soup– We all loved this recipe! It was so easy to make and very comforting on a snowy day.

TUESDAY- Enchilada Casserole with Quinoa- I was inspired by this recipe but ended up doing my own thing based on what we had in the fridge. I loved the idea though and it came together very quickly.

WEDNESDAY- Hot Honey Chicken with Lemon Oregano Potatoes– Matthew is a big fan of Mike’s Hot Honey so I had to make this recipe for him. I left the hot honey sauce off for the kids and they still loved it!

THURSDAY- Salmon and Roasted Brussels Sprouts with Honey Sesame Glaze and Cauliflower Rice- This is one of our go-to recipes and we’ve made it countless times over the past several years, sometimes with tofu, shrimp, or salmon, broccoli, etc. It’s a keeper of a recipe!

FRIDAY- Eggplant Parmesan– This is one of our go-to recipes and while it takes a bit of work, it’s so worth it! We always LOVE it, even the leftovers!

SATURDAY- pizza & salad night! The kids had pizza and I had leftover eggplant parmesan.

SUNDAY- Shrimp Pad Thai with miracle noodles – have you ever had those miracle noodles? They’re gluten-free, made from a Konjac plant, and take on whatever taste the sauce is. They work especially well in an Asian-inspired dish.

Corinna and I baked banana bread together which was so fun! She loves to put on her personalized apron and help me. We got this apron for the holidays, but it works well year-round!

I also made sourdough pancakes this weekend that were so delicious! I think it needs to be a Sunday morning tradition!

ON MY MIND

Baby Beatrice is getting so busy and even rolled from her back to belly for the first time on March 31st! She loves to be held and while we have loved our bouncer, I think I need to look into another activity center that will be more interesting for her. Plus, she’s so close to sitting up on her own so the bouncer won’t work for much longer anyway. It’s so bittersweet because that bouncer has been a favorite with all three kiddos and I can’t believe it’s already time to retire it. I’m looking into getting this Skip Hop activity center but please let me know if any of you have a suggestion for another one.

Easter is next weekend and I saved a bunch of ideas on my Amazon storefront if you’re looking for anything. How cute is this floral bunny or these sunnies? As for food, I only know I’m planning on making a carrot cake. Earlier this year I was thinking about how I really want to have certain traditions for holidays with specific desserts. Carrot cake seems like the perfect one for Easter. Since Matthew and I are still attempting a low-carb and refined sugar-free diet, I’m going to make the carrot cake from the Sweet Laurel cookbook. It’s supposed to be a favorite in their bakery. I’d love to know what any of you are making, or foods you look forward to on Easter Sunday!
