Mornings are a little more hectic these days with the baby but it’s also a chance for some “me” time. Augustine usually wakes up around 6am so during his first nap is when I’ll get the chance to make some breakfast. I don’t have too much time so easy breakfast recipes are key, but I also try to multitask at the same time. A mama’s got to do what a mama’s got to do!

Many of you know how much I love to read. It’s one of my favorite hobbies but one that’s been a little harder to fit in since having Augustine. Lay on the couch and read a book? That sounds like heaven! Usually, by the time Augustine is asleep, and my work is done, I’m falling into bed eyes half closed. A book is the last thing on my mind!

3 easy recipes to make while listening to audible

In an effort to still make time for my favorite hobby, I’ve been using Audible {I’ve talked about it before here}. I absolutely love that I can listen to books while I do other things, like drive or cook. When you’re stuck in traffic, listening to an Audible book is the only thing that keeps me sane. Lately, though, I’ve been loving listening to books while I cook, usually during breakfast but also at dinnertime. I’ll play the book while I move around the kitchen, chop veggies, and mix ingredients. Unlike a book, I don’t have to turn the pages so I’m not getting my phone dirty in the process. Thank goodness!

One book I’ve been loving lately is actually food related. It’s 40 Years of Chez Panisse:  The Power of Gathering. Alice Waters is one of my chef icons, and I was so lucky to dine at Chez Panisse while I was in college since it was right down the street. She’s really a legend in the Bay Area and for good reason. Alice helped pioneer the local, organic food movement, and has inspired countless chefs over the years, even home cooks like me! The book spans through the 1960s to the present day, showing how this small, neighborhood restaurant made a mark on the food world. I’d highly recommend it! It also has inspired me to get a little creative in the kitchen. Today I’m sharing 3 Easy Breakfast Recipes that are perfect when you’re on the go and don’t have much time!

3 Easy Breakfast Recipes

Oatmeal with Almond Butter and Coconut

I love oatmeal for a filling and healthy breakfast option. I’ll make a bowl with water or almond milk, and then add a spoonful of almond butter and top with coconut flakes, hemp seeds, and chia seeds. It’s so satisfying and tasty and I don’t even need any honey or sweeteners!

Yogurt Parfait with Fresh Berries and Granola

A yogurt parfait is a great breakfast to make ahead of time and store in the fridge. I love adding granola, berries and some fresh mint leaves!

Avocado Toast with Tomato and Hard Boiled Egg

Avocado toasts are one of my favorite easy breakfast recipes. They’re so delicious that you’d think they’re bad for you. Avocado toasts are a great way to get in some protein first thing in the morning. I’ll spread avocado on a piece of toast, and lately I’ve been topping it with tomatoes, red onion, and hard-boiled egg slices. I like to add some Aleppo pepper on top too! It adds a little heat, and looks pretty too!
