Even before Matthew and I had Augustine, we would consider ourselves to be homebodies. While some of our friends would look forward to a night out, we’d look forward to a night in. Couch, pjs, movie, pizza, we’re there! And throw in some chocolate chip cookies, and I’m not moving…unless I need some milk!
These days, we end up being home the majority of the time but yet our nights in don’t feel quite the same. I’m trying to make certain nights feel more special and date night-like, even if we don’t leave the house. Since I love to cook I thought it would be fun to have a pizza night with Matthew. Read on for the go-to combination we can’t wait to make again. You’re going to want to try this pizza for your next date night at home, promise!
One of the things I love about cooking is experimenting with different products and brands. I try to keep our pantry as well stocked as possible and with healthy-ish foods. When Jet reached out about working together I was really excited because their site carries such great brands but at crazy good prices. Their Uniquely J brand in particular has so many great products that were perfect for our pizza night date night. I especially love that they have a lot of organic and natural options!
I got this delicious cold-pressed (& single origin!) olive oil from Uniquely J that is perfect for cooking with. It was the perfect base for our pizza and I also used some to coat the crust and make it a little crispier. After I put this in the oven Matthew and I were like shoot we should have done a cheesy stuffed crust! I’ve never done that for a homemade pizza before but I bet it would be delicious!
One thing I love about the Uniquely J by Jet brand is that the packaging is really good! They have the kinds of labels you wouldn’t mind leaving out on the countertops, which is a huge plus for me! Also, their snack bags have the funniest sayings on the box. Look at this one!
The Tomato Basil Sauce by Uniquely J was so tasty on our pizza! I loved that the basil really came through in the sauce and that a little went a long way. What I loved about trying out these products is that many are organic but also still affordable. I try to get organic products when I can, especially when the price is comparable. There’s almost no excuse not to at that point!
After topping the pizza with the tomato basil sauce {which is so good with penne pasta by the way!}, I added broiled eggplant, fresh mozzarella, and thinly sliced red onion. Then we cooked it in the oven for about 10 minutes at 450 degrees and topped it with fresh basil. SO so good!
Other favorite pizza combos include:
- pesto, goat cheese, and fingerling potatoes
- gruyere, mushrooms and fresh oregano
- figs, onions, gruyere, and rosemary
- butternut squash, fennel, goat cheese
- apples, brie, caramelized onions, and a drizzle of honey
