berry and mint floats

When it gets super warm outside, I start to crave anything cold. Milkshakes and floats are some of my favorite dessert drinks, and I love that this one still feels somewhat healthy with fresh blueberries and blackberries. 

Berry and Mint Floats inspired from this Bon Appetit recipe
makes 4

INGREDIENTS
1 sprig mint
1/4 cup sugar
1/4 cup orange juice (the original recipe called for Aperol, which is similar to Campari but sweeter and not as strong)
6 oz mixed blueberries and blackberries
1 pint vanilla ice cream or gelato
2 12-oz. cans club soda
DIRECTIONS
Bring mint, sugar, and 1/4 cup water to a boil in a small saucepan, stirring to dissolve sugar. Remove from heat, cover, and let sit 15 minutes. Remove mint spring and let syrup cool. Stir in 1/3 cup orange juice or Aperol.
Divide syrup and berries among 4 tall glasses and muddle berries, as much as you can so berries don’t get stuck in straw. I also might recommend passing berry mixture through mesh strainer so get some of the clumps out. Dividing evenly, add ice cream and top off each with club soda and more OJ or Aperol, if desired.
