my favorite healthy oatmeal recipe

January 14, 2014

There are some things that make me realize I really am a creature of habit. I have to wash my face before going to bed every night {no matter how tired I am}, weekends always include some baking, and I always wear a certain perfume when I wear the color blue {am I crazy?!}. Another thing is that my Mondays through Fridays always include oatmeal for breakfast, at least they have for the past 5 months or so. I usually don’t have time to make the good stuff during the week so it’s all about the Instant, but when I do have time, oh my gosh it does not even compare! I love how it’s so hearty and healthy. This recipe is one of my favorites for winter and it always fills me up until lunchtime, which is the best!

Healthy Oatmeal with Nuts & Berries
makes 2 servings

1 1/2 cups boiling water
2/3 cup rolled oats
1 cinnamon stick
almond milk
shaved coconut
shelled hemp seeds

Preheat the oven to 350 degrees. Spread oatmeal onto ungreased baking sheet {I fitted mine with a piece of parchment paper}. Cook for 8-10 minutes, stirring occasionally, until there’s a nutty aroma. Allow to cool. Stir the oats into the boiling salted water and add a cinnamon stick. For creamier oatmeal, cook for about 7 minutes, stirring often. Remove from the heat, cover, and let stand for 5 minutes.

Serve with above toppings. I love adding almond milk and my favorite berry + nut combo right now is blackberry and walnut. Shaved coconut is a yummy addition, and I always have shelled hemp seeds on hand for an extra healthy kick!

* I prefer toasting my oats first when I have time because I love the nutty flavor, but feel free to skip that step if you wish!

I’d love to know your favorite oatmeal combo! Have you ever made it homemade before?
