zucchini and manchego pizza with stella artois

Pizza and beer are a pretty no brainer combo, especially for Matthew. Those are two of his favorite foods. Yes, beer is considered food and drink over here! When I think of pizza I don’t usually think of the typical American pizza chains. I think of the pizza my Dad made for us growing up. He would heat the house up to well over 400 degrees with his hot oven and I would come into the kitchen and nibble on fresh mozzarella and help him come up with topping combinations. Since I don’t eat meat, veggie combos were my favorite. My Dad would combine different fresh vegetables with herbs and unique cheeses and what came out of the oven was something so delicious and satisfying. For me, cooking has become such a great release. It’s something that I enjoy more than almost anything. I could have had the worst day and yet I’ll get into the kitchen, open the refrigerator and lose myself in making dinner. It’s also incredibly rewarding to make something for family and friends that they love. I know the chef is supposed to take the first bite, but I love just watching and waiting to gauge reactions. There’s really nothing quite like a homemade meal. And the celebratory aspect of sitting around a table together, talking over good food and drink is my favorite. I thought I’d share a recipe for this zucchini and manchego pizza. It’s flavorful with the salty cheese and addition of fresh thyme and sea salt takes it to another level. It would pair so well with a blonde pilsner-style beer, like Stella Artois. Scroll down to see the recipe below!

Stella Artois recently came out with a video campaign called “The Butcher, The Baker, and The Belgian Beer Maker” and it makes me think of my family and all the memories we have together in the kitchen and around the dinner table. There is so much history with food and it’s so cool to see how far we’ve come and yet how much we all still enjoy the very essence of it. I’d totally recommend watching the 3 episodes when you can. They’re short, only 3 minutes each, but so inspiring! Here’s the recipe for my Zucchini and Manchego pizza:

Zucchini and Manchego Pizza
makes 1 pizza


INGREDIENTS
pizza dough {homemade is always best but if you’re in rush Trader Joes has an amazing one in the refrigerated section!}
olive oil
2 garlic cloves, minced
1 cup mozzarella cheese, grated
1/2 cup manchego cheese, grated
1 zucchini, sliced into thin strips with the help of a vegetable peeler
1 Tablespoon fresh thyme
sea salt

DIRECTIONS
Preheat the oven to 425 degrees. Drizzle a little bit of olive oil on a baking sheet and and spread around to coat evenly. Roll dough out into a round of rectangle and put on baking tray. Top pizza with a drizzle of olive oil, garlic and cheeses. Spread the zucchini slices on top and sprinkle with thyme and sea salt. Cook for 10-12 minutes until crust is golden and cheese is bubbly and browned in spots. Enjoy!
