Summer Pineapple Smoothie Recipe

Before we moved I was trying to use up what we had in the fridge and freezer and came across this smoothie combination that was SO good! I posted it on InstaStories and got some requests for the recipe, so I thought I’d make a post out of it. This smoothie is so good and creamy yet healthy thanks to a secret ingredient. I bet you can’t guess it – no, it’s not banana! It adds zero flavor, yet a lot of extra nutrients. Keep on reading for my new favorite summer pineapple smoothie recipe.

How delicious does this smoothie look and not to mention cute in this pineapple tumbler? So any guesses on my secret ingredient?! It’s cauliflower! Ah have you ever tried it before in a smoothie? I usually add spinach or kale to my smoothies, but for this one I wanted to keep the light cream color. You can’t taste the cauliflower but it does add a little extra health benefit. The toppings I always have on hand are chia seeds, coconut flakes, goji berries and bee pollen. They add a little extra flavor to the top!

Summer Pineapple Smoothie

makes 1

INGREDIENTS

1 cup of coconut milk

1/2 banana

1/3 cup mango

1/3 cup pineapple

handful of cashews

1/2 cup of cauli rice frozen

1 scoop protein powder {optional}

a drizzle of agave {optional}

top with goji, bee pollen, coconut and chia seeds

DIRECTIONS

Blend all ingredients together {I use a Vitamix blender– best wedding gift!}, making sure the consistency is completely smooth. I’ve added protein powder to this one before {amazing with coconut protein powder!} and loved it but didn’t this time around. Top off with goji, bee pollen, coconut, chia seeds, or anything else you fancy.
