Happy Cinco de Mayo! I know things probably aren’t feeling very fun or festive right now, and while I would love to go sit in an actual Mexican restaurant today, we’re going to be celebrating at home. We needed something to take us out of our social distancing funk and this yummy Cinco de Mayo recipe roundup just might do the trick!Love this tasty Cinco de Mayo recipe! - M Loves M @marmar Love this tasty Mexican pie recipe! - M Loves M @marmar Love this tasty Cinco de Mayo recipe! - M Loves M @marmarLove this tasty Cinco de Mayo recipe! - M Loves M @marmar

The Ultimate Cinco De Mayo Recipe Roundup

What I love about all of the recipes in this Cinco de May recipe roundup, is that they are so easy and delicious. Most are pretty healthy too, even the margarita! These recipes are my go-to Mexican recipes, but I’ve heard such amazing things about this cookbook that I think I’ll have to pick it up and try some new ones. Our family loves Mexican food, especially Augustine. He’s always wanting to “sit taco,” a phrase he made up about a year and a half ago!

Black Bean and Mushroom Taquitos with Spicy Guacamole

I created this recipe when Trader Joe’s sold out of my favorite frozen black bean taquitos. It’s not quite as simple as microwaving the frozen version, but they’re even tastier!

Vegetarian Roasted Cauliflower and Fajita Veggie Tacos

Healthy, fresh, and basically summertime on a plate! These are so yummy, and a great way to sneak in some veggies!

Skinny Margarita

Much healthier and tastier than a pre-mixed margarita. Although, those do the trick too! By the way, are you salt or no salt margarita girl?

Healthy Breakfast Burritos

These breakfast burritos are super easy to meal prep but they make a great weeknight dinner too!

Black Bean and Corn Mexican Pie

Indulgent and delicious. It might not look the tastiest but trust me, it is!

Mexican Hot Chocolate Snickerdoodles

And of course, we need a little dessert to finish off the meal! I haven’t had these since one of my readers shared them way in 2010, and now I’m dying to make them again!
