03: week in review

One crazy thing about these weekly posts is that the time speeds up so much between them. This week went by very fast and I felt like I wasn’t as present on social media. Sometimes I get out of the habit of posting because life right now is so busy. While I used to feel bad about that, I’ve really tried to remove that pressure from myself and instead show up genuinely and authentically. I appreciate you following along over on Instagram, even with the slower weeks!

Here’s what our week was like though:

WHAT WE ATE

my plan is to share the meals I made the previous week, with links if possible, as some inspiration for your own menu planning.

 

SUNDAY: Spaghetti Squash Pad Thai with Shrimp– This recipe is definitely a repeat! We all loved it so much! I made it with shrimp (instead of chicken) that I added at the end without the arrowroot powder, and I used peanut butter instead of almond butter. It’s also Whole30-approved if you’re looking for those sorts of recipes.

MONDAY: Rump Roast with Roasted Carrots- Matthew has a bunch of different cuts of meat in our deep freezer so he pulled out a rump roast to cook. I’ll admit this wasn’t my favorite but it’s pretty classic if you like this type of meat.

TUESDAY: Zuppa Toscana Soup with Salad and fresh sourdough- We had friends over for dinner so we swapped our taco night around since that’s always harder to make for a group. This soup is always a favorite, though, and while we tried a different version, my favorite is still this one!

WEDNESDAY: Taco Night – Augustine looks forward to taco night all week long! Ok, who am I kidding, we all do! I’m hoping that next week I can make my own tortillas which apparently isn’t as hard as you’d think!

THURSDAY: Romanian Meatball Soup (Ciorba de Perisoare)- My sweet friend Tanya taught me how to make the most delicious Romanian meatball soup last week. This recipe is similar except Tanya’s version doesn’t include lemon or dill, although I’ll have to try that at some point. She also used turkey for the meatballs instead of pork. Apparently, there are a lot of versions of this soup, even among family members. It’s a keeper for sure, and one that will make me think of my dear friend!

FRIDAY: Eggplant Lasagna- Another new version, but we still think this is our favorite – just use less salt on the eggplant! This dish is always a favorite for all of us and satisfies that pasta/Italian craving without the pasta.

SATURDAY: Roasted Chicken Thighs with French Bistro Salad (radicchio, endive, green apple, Roquefort cheese, toasted pecans)

WHAT I WORE

One of my favorite purchases from Fall 2020 was a half-zip sherpa sweater. I’ve been wearing it lately and I wish I could find the exact one online to share with you all. This one is similar though, and also this one. And this fleece option is in a similar beige color as mine. It’s a piece I’m sure you’ll reach for often!

I painted my nails the prettiest sheer pink this week and I love how it makes my nails look. It’s so subtle but in a way that makes my nails look elegant. The color is Olive and June EC. You can also get it in this adorable little set and then you can try their amazing gloss top coat! A simple manicure helps me feel put together, even in sweats!

Speaking of sweats, I’ve been wanting a break from my leggings so I’ve been loving this nursing-friendly jumpsuit. It’s so cute and comfortable. And it looks cute with a longer cardigan over it.

One of the items I own on sale is this polo knit dress which is so incredibly soft and flattering. If you’ll be pregnant this summer, take a look at their swimsuits too. Also one piece my wardrobe lacks is a blazer coat. I feel like it would be such a versatile item that would dress up my wardrobe a bit. Also I’m considering getting a pair of jeans in my temporary postpartum size bc I really miss wearing them. There are a bunch of good options on sale right now, like this black pair. And I love this slouchy cardigan that’s under $40.

ON MY MIND

Baby Beatrice started to laugh this week which is beyond precious! Corinna put on a tutu dress and was jumping around and Beatrice made a few little giggles! Another cute thing that happened this week was when Corinna gave Beatrice a kiss on the cheek she said, “her cheeks are fluffy!” That’s something I always want to remember.

I moved Baby Beatrice’s bassinet around in our room so that I could have a little more space by my bed. We have loved the babybay bassinet sleeper, especially since it can convert into a crib. I got the wheels on it too so that I can move it around easily which came in handy this week. The style is so versatile and it’s incredibly well-made considering the good price point. We are still loving these energy balls so I made a batch for the week. They’ve become my favorite nursing snack with a raw milk steamer with cinnamon!

Today I’m in the kitchen making sourdough bread and meal planning so I’m a happy girl. We’ve been having some snowy days but the blue skies make it so beautiful. I hope you all have a wonderful week ahead!
