This has been such a lovely, and different, weekend for me. Matthew took the two big kids camping so I am home with just baby Beatrice (and Ginger the dog). I loved being able to give her so much personalized attention. It reminded me a lot of when I just had Augustine. I took advantage of Beatrice’s naptimes to get a lot done around the house. I felt like I was a mama on a mission! And then with her earlier bedtime, I had a nice evening where I could shower, bake a dessert, and get this blog post done before it got too dark out. It’s the little things, I’m telling ya! We definitely missed everyone though so it will be nice when they get back tomorrow afternoon.

Here’s a recap of our week:

WHAT WE ATE

I plan to share the meals I made the previous week, with links if possible, as some inspiration for your own menu planning.

MONDAY- Honey Garlic Shrimp, Corn, Avocado, and Bacon Salad– the first time we made this we knew it was a keeper! It’s seriously so good and absolutely perfect for the warm summer months.

TUESDAY- Grilled Ribs with Coleslaw Salad (from Alison Roman’s newsletter) for the 4th, plus the most delicious berry cheesecake bars

WEDNESDAY- Pork Chops with Toasted Garlic and Spicy Capers – from this cookbook that my Dad recommended to me. This recipe was so good, Matthew asked me to write it down.

THURSDAY- Beef Enchiladas from Magnolia Table – found a YouTube video of it being made here

FRIDAY- Grilled Rib Eye with Burst Tomato and Chimichurri- from this cookbook

SATURDAY- Sourdough and Butter with a side salad (don’t judge, I took advantage of not having to cook for anyone!)

SUNDAY- Sweet and Sticky Roast Chicken – also from this cookbook

I made the Browned Butter Peanut Rice Crispy Treats with Peanut Butter Ganache from this dessert cookbook which I highly recommend. I surprisingly love a rice crispy treat, especially if chocolate, peanut butter, and browned butter are involved! I’m going to try this version next.

WHAT I WORE

We were very patriotic this week with our red, white, and blue! Considering that red is one of my favorite colors, I don’t have too much of it in my closet right now so I wore a white dress with a blue bandana in my hair and some red lipstick. Corinna and baby Beatrice had headbands on too! By the way, want a good red lipstick? This Lancome shade is a classic!

I’m loving the color combo of black and nude so I wore some linen pants with this great tank. The linen pants I’m wearing are sold out but this pair is a great option. Or this pair!

ON MY MIND

It feels like we’re in summer full-swing these days with 4th of July festivities and berry picking this past week. I haven’t been to the river or the pool yet so maybe this will be my week, although it seems like a little much with a small baby. That might be a good weekend activity to look forward to when I have Matthew’s help. I’m thankful it hasn’t been too hot, but I think the temperatures will be hovering close to 100 this week. Baby Beatrice, my fall baby, has been experiencing hot weather for the first time in her life!

Matthew’s birthday is coming up and we’re so excited to celebrate him! I thought it would be fun to make one of his favorite meals each night of the week so I’m currently in planning mode!

I harvested my garlic this week which is always so exciting! I planted the first week in November so early July is the typical harvest date. I’m hoping I can braid them since I got the soft-necked variety.
