42: week in review

date night at home -

I hope you all are enjoying your weekend! Today (Saturday) has been one of those long, tiring days. I wasn’t as busy around the house but I think the week just caught up to me. I was reading a story to Augustine while the girls were napping and fell asleep myself! I am not a napper but I also don’t really let myself lie down during the day. Combine lounging on the couch in a sunny room and reading a book, I had no chance!

WHAT WE ATE

I plan to share the meals I made the previous week, with links if possible, as some inspiration for your own menu planning. 

MONDAY- Creamy but Cream-less Tomato Soup and Biscuits– packed full of so many veggies and incredibly flavorful. Loved the easy biscuits so much too!

TUESDAY- Honey Chipotle Salmon Tacos– easy and so delicious. I didn’t include as much of the chipotle in adobo because of the little ones but Matthew added hot sauce on top.

WEDNESDAY- Soulva-inspired Chicken Salad– yummy and fresh tasting

THURSDAY- One-pan Creamy Boursin Pasta with Shrimp– such a fun way to make spaghetti! I liked the leftovers even better though, to be honest.

FRIDAY- Sourdough Pizza (a repeat of last week’s eggplant, red onion, tomato sauce, mozzarella, garlic, fresh oregano and basil)

SATURDAY- One-Skillet Sausage and Mushroom Cassoulet– I made a cassoulet earlier in the year that was very similar to this and not very good. Why I was inspired to make this one, I’m not sure, but I’m so glad I did! This recipe was so delicious and the kids loved it so much. I can’t wait for the leftovers tomorrow.

WHAT I WORE

I’ve been loving wearing my favorite fall boots! Margaux makes the most beautiful pairs and this one is the best with jeans or dresses. I love the slightly Western-inspired shape. I’ve been looking at their Chelsea Boot lately because it’s in a water-resistant suede that would work rain or shine.

For a park outing, I kept it simple in all black with a denim shirt and sneakers.

ON MY MIND

Beatrice’s birthday is coming up and I’m planning on making cinnamon rolls. I feel like this might be her traditional birthday breakfast because I made a batch the morning I went into labor with her! This was the recipe I used- with sourdough!

We’ve been soaking up the most beautiful autumn weather in Boise. I’m getting a little sad seeing the leaves fall from the trees in our backyard because the colors have been so beautiful. If you want to fall in love with Idaho, come in the autumn!

Our kiddos have been waking up so early these days. We’re talking 5:30-6am for all 3 of them! The time change is a few weeks away but I’m trying to figure out the best way to adjust them because with the time “falling back,” I’m going to need to get them to sleep in a little later!

Matthew and I had a date night at home last Sunday and it was the perfect way to end our weekend. It’s hard to get quality time just the two of us, not to mention a meal where we can talk without interruptions lol. It worked out well with the kids going to bed early and now I think we need to try to make it a regular thing!

Happy weekend everyone! I’ve had a busy weekend of meal prep over here. Of course, I decided to be busy in the kitchen when Matthew is off camping, but thankfully he came back a little early (his choice not mine) so I will have some extra help today (Sunday). I made granola, bread, pizza dough, sandwich loaves, salad dressing, and cookies for the adults and I still have more to do! I try to do what I can when I can because it does help the week go more smoothly.

WHAT WE ATE

I plan to share the meals I made the previous week, with links if possible, as some inspiration for your own menu planning. 

MONDAY- Turkey Meatballs with Corn Rice– These were amazing! I wish I had doubled the recipe because I seriously can’t wait to make them again.

TUESDAY- One-pan Roasted Chicken, Cauliflower, and Potatoes with a Ridiculously Tasty Green Sauce– This is a keeper of a recipe! The cauliflower was loved by all, especially baby Beatrice!

WEDNESDAY- Green Chicken Tortilla Soup– this was so yummy! I’ve been enjoying the leftovers all week.

THURSDAY- Sheet Pan Sausage with Apples and Sweet Potatoes– so amazing I’ve already written it down. It’s simple but so delicious and perfect for fall. Another kid-keeper!

FRIDAY- Healthy-ish Turkey Bolognese– I cooked this from morning to evening and it was delicious! I was especially happy to find out that Baby Beatrice loved it too! There are lots of hidden veggies in here and I also added some mushrooms as well.

SATURDAY- Sourdough Pizza (I used Ken Forkish’s recipe and it’s so good! I love that it uses discard from making a sourdough loaf)- we topped ours with eggplant, red onion, garlic, mozzarella, Parmesan, fresh oregano and thyme. One of the best!

SUNDAY- Pork Chops and Farrotto

As you can see, this week I made a lot of recipes from Caro Chambers. My best friend gifted me a trial to her paid Substack and I have loved cooking her recipes. They have all been hits not just with me, but especially the kids. As some of you can attest, cooking for the tiny humans isn’t always easy. They can be opinionated and like what they like when they like. All of the recipes I’ve made this week- all of them- have been hits! I have to say, life is so much easier when my little ones go to bed happily fed with full tummies!

As a special treat for Mom and Dad, I made Caro’s Coronado Cookies (no raisins). They were so good and definitely a keeper of a recipe. I love the oatmeal, chocolate chip, and rice crispy combo. And the peanut butter (I didn’t have almond butter) made the base flavor so good. Also, kid-approved (of course!).

And for the kiddos, I made some pumpkin bread with cinnamon maple butter. I’ve said it before and I’ll say it again, I love fall baking!

I found my Made by Mary birth flower necklace in my jewelry drawer the other day and I’ve loved wearing it again. It’s so pretty and would make such a sweet gift for a friend!

It’s definitely been a little chilly in the mornings so I’ve been needing to wear my black puffer jacket. This puffer jacket comes in a bunch of color options and it packs up well.

ON MY MIND

I’ve realized that I need to get new shoes for the kids since they’ve outgrown everything from summer! I’m looking for a pair of snow/winter boots and another boot that can be dressed up or worn casually. If you have any suggestions, send them my way! I did find these cute Mary Janes for Corinna that I’m excited about. I love the L’Amour brand because of all their sweet classic styles.

I’m hoping we can take some family photos this year since we didn’t take any last year. As a mom, those things are what I cherish most. I picked out some cute outfits from our absolute favorite children’s clothing brand Baybala (they have cute mama pieces too!) and I can’t wait to see everyone dressed up!

I picked some of our hydrangeas to bring inside and the color is so pretty. Last year I missed cutting them at the fuschia stage and they were more mauve/brown- still pretty but I love this shade. It will be nice to have them brighten up our winter.

39: week in review

Hi friends! I hope you’re having a wonderful weekend. It truly feels like autumn here- we’ve had rain off and on all weekend and much cooler temperatures. Now that it’s October 1st I’m ready for all the fall baking. I love being in the kitchen year-round, but especially during autumn! Matthew is heading out of town tomorrow for a week-long work trip and we were talking about how maybe it’s the longest he’s been away during our whole marriage, definitely for each of the kids too. I’m so thankful that we get to spend as much time together as a family as we do, that six days seems like a long time, but it doesn’t mean we’ll miss him any less. I’m trying to plan some fun things with the children to help ease their missing Dada pain. So far, I have some yummy meals planned and sleepovers with the big kids. Maybe I’ll throw in a hot cocoa outing too! I joke with Matthew that he’s the favorite but he really is. He’s such an incredible Dad and all three of those kids, including Beatrice feel his love always. During Matthw’s last work trip, 10-month-old Baby Bea was saying “Dada Dada” at nighttime because she was noticing his absence.

WHAT WE ATE

MONDAY-  Rotisserie Chicken Salad– this salad is so good! It’s our second time making it and a hit each time!

TUESDAY- Sizzling Beef Bulgogi Tacos – this was such a nice change from our normal Mexican taco night. So flavorful and easy! I especially loved the iceberg slaw.

WEDNESDAY- BBQ Meatballs and Greek Salad from Simply Symon Suppers – the meatballs were ok. Not blow it out of the park amazing but they got the job done. Maybe I should have added more bbq sauce on mine. The Greek salad on the other hand was amazing and so authentic tasting. I couldn’t find the recipe online anywhere but I’ll see if I can write it out for next week. It’s all the normal players: tomato, cucumber, feta, but just classically delicious!

THURSDAY- Grilled Salmon Steaks with Bok Choy and Mustard Sauce – this was so incredibly delicious that I made a mental note to write down the mustard sauce recipe. It was amazing! I’m very excited to cook more from this cookbook now after having two very delicious meals!

FRIDAY- Neighbor PotLuck – we are blessed with the best neighbors! We had tacos, guac, corn salad, broccoli salad, and I made Mexican rice and beans.

SATURDAY- Cacio e Pepe– always trying new versions which is silly because it’s the simplest recipe ever but we liked this one a lot.

SUNDAY- Cast-Iron Smash Burgers with Fries – It’s October 1st but we still love our burger nights. Not ready to let these go just yet.


I also made this Creamy Gnocchi Soup for a friend who just had a baby, and also these Brown Butter Apple Blondie Bars. I snuck a few and they were delicious!

In honor of fall, and the start of October, I made a sourdough pumpkin loaf. I made one last year and I think they’re just too cute with the cinnamon stick sticking in as the stem. The kids ate it with apple butter for a snack yesterday.

I got bangs this week which I’m getting used to. I think I need about 1/4″ cut on them but once they’re right I think I’ll like them a lot! I just think I needed a little change and bangs feel fun for right now. (If you’re postpartum you’ve probably done the same, or thought about it!)

I have a few sweaters from Ralph Lauren that I’ve owned and worn for several years that feel just as good as new. I don’t think I can say that about a lot of brands, but I really can about RL. The quality is so good that they hold up.

ON MY MIND

As I mentioned, this week will be a little different with Matthew gone. We’re going to keep busy when we can and I’m going to try to make a bunch of easy recipes. My best friend shared Caro Chambers with me and she is a recipe developer with young kids of her own. She has a Substack with lots of recipes and ones specific for those crunch-time dinner periods where you just need to get food on the table. I have several of her recipes planned that I’m excited to try out. They not only look easy but delicious as well!

Because I have a lot of fall desserts I want to make I’m trying to stay organized. Each week I’m allowing myself to bake one treat and one dessert. My hope is that I can really narrow down the things I want to make without going overboard. Treats are aimed at being healthier snacks for the kids, and the dessert is a DESSERT. One day, when I have some more time, I’ll share more of my baking adventures because it really is my favorite thing.

Matthew and I were able to get out for a sushi date yesterday which was so nice! We made a New Year’s Resolution to go on monthly dates and we’ve been so good minus a few months when my mother-in-law/babysitter extraordinaire was out of town. It’s always so nice for us to have time together just the two of us, where we can complete a conversation without interruptions and it doesn’t take 5 minutes to get in and out of the car with car seats and such.
