For our Halloween party I made these yummy pumpkin cupcakes with cream cheese frosting! This is seriously the easiest recipe ever because it includes a little bit of cheating…
Want to know my secret? The cupcakes are made from the Trader Joe’s Pumpkin Bread and Muffin Mix! You just add water, oil and eggs. I feel like a little bit of a baking cheater but they’re easy and so good! I did make the cream cheese frosting recipe, though! I really like this one from All Recipes:
Cream Cheese Frosting
Ingredients
2(8 ounce) packages cream cheese, softened
1/2 cup butter, softened
2 cups sifted confectioners’ sugar
1 teaspoon vanilla extract
Directions
1. In a medium bowl cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners’ sugar. Store in the refrigerator after use.
I made half the frosting recipe because I knew it would be too much. Then we decorated with a kit I got from William Sonoma! I loved putting on all the different sprinkles! If you like pumpkin and cream cheese you seriously have to try this recipe!!
Have a great weekend everyone! Matthew and I have our first marriage counseling session tomorrow! I’m kind of excited..is that weird? Maybe a little.
