recipe: pumpkin cupcakes with cream cheese frosting

Want to know my secret? The cupcakes are made from the Trader Joe’s Pumpkin Bread and Muffin Mix! You just add water, oil and eggs. I feel like a little bit of a baking cheater but they’re easy and so good! I did make the cream cheese frosting recipe, though! I really like this one from All Recipes:
Cream Cheese Frosting
Ingredients
  • 2(8 ounce) packages cream cheese, softened
  • 1/2 cup butter, softened
  • 2 cups sifted confectioners’ sugar
  • 1 teaspoon vanilla extract

Directions

1. In a medium bowl cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners’ sugar. Store in the refrigerator after use. 

I made half the frosting recipe because I knew it would be too much. Then we decorated with a kit I got from William Sonoma! I loved putting on all the different sprinkles!  If you like pumpkin and cream cheese you seriously have to try this recipe!!
