This recipe is so unique and a combo I never would have come up with on my own, but I’m glad I tried it. Between the sweet peaches, the spicy chili, and the cooling mint, this recipe is basically summer in a bowl.
and here’s my recipe for an Avocado Greek Salad
- 2 Persian cucumbers quartered
- 1 avocado diced
- 1 radish thinly sliced
- 1/3 cup sundried tomatoes chopped
- ½ cup Kalamata olive halved
- 2 oz feta cheese crumbled
- ¼ red onion chopped
- 2 scallions whites and light greens thinly sliced
- 2 springs of mint chopped
- 2 springs of dill minced
- 1-2 Tbl Lemon Olive Oil Dressing recipe below
- salt and pepper
- Za'atar spice* optional

Add veggies and herbs to bowl and mix gently with 1-2 Tablespoons of lemon olive oil dressing. Add salt and pepper, to taste and sprinkle Za'atar on top.
*You can make your own Za'atar by combining 1 Tbsp. chopped fresh oregano, 1 Tbsp. sumac, 1 Tbsp. ground cumin, and 1 Tbsp. sesame seeds. Stir in 1 tsp. kosher salt and 1 tsp. freshly ground black pepper. *makes about 1/4 cup, so save the rest!
- 1 tbsp lemon juice
- 1 tbsp red wine vinegar
- 4 tbsp extra virgin olive oil
- salt and pepper

Add lemon juice and vinegar to bowl and slowly drizzle in olive oil while whisking constantly. Add salt and pepper to taste.
