I always thought having a fully stocked fridge and meals planned for weeknights was difficult…until I had Augustine and realized it’s nearly impossible! Which is why, over the past two years I’ve worked hard to get pretty close to perfecting our meal planning system so we always have what we need on busy weeknights to make healthy and easy dinner recipes. I love this cookbook, The First Mess by Laura Wright. It’s a completely plant-based cookbook which I find so helpful since I’m a vegetarian (I do eat fish still!). Everything I have ever made from this cookbook is amazing. I seriously can’t get enough of the coconut creamer recipe from the book that I used in this iced mint coffee recipe. It’s been such a refreshing way to get my caffeine fix this summer. Thursday’s recipe is also from this cookbook. But I wanted to make sure I was only using recipes this week you could easily find online. I’ve made sure to link to each recipe below and have provided a FREE shopping list so you can easily head to the grocery store and start cooking!

Chilled Corn Soup with Crab Salad

Tuesday

Harissa and Kale Zucchini Noodle Skillet with Feta

Wednesday

Loaded Greek Quinoa Salad

Thursday

Broccoli Caesar with Smoky Tempeh Bits

Note: For the broccoli Caesar, roast the broccoli! It’s better that way.

Friday

Caramel Chipotle Sweet Potato Burrito Bowls

Note: Use feta instead of queso fresco and fresh corn instead of corn salsa. You can add hot sauce though!


To make use of any leftover ingredients, whip up a scramble on Saturday or Sunday with eggs, feta, pine nuts, sun dried tomatoes and basil and tempeh bacon on the side. You can also use up some of the other ingredients by making side salads! You can make arugula salads with any combination of  pine nuts, sun-dried tomatoes, feta, thyme, and celery!
