I found a meatless meal that the whole family loves! That’s right, last week I made the ultimate veggie sandwich and realized I had to share the recipe with you all! It is light, but filling, and packed full of flavor and healthy ingredients!
When it comes to favorite lunches I LOVE a good veggie sandwich! And actually so does my meat-eating husband. There’s just something about a veggie sandwich that is so tasty- it’s hearty and filling while housing a lot of good for you ingredients. I know sometimes a salad might be a healthier option, but I rarely turn down a sandwich especially when there’s good bread involved! Last week we got this delicious squaw bread and I made this ultimate veggie sandwich that was beyond delicious. Matthew and Augustine loved it too! Sharing the recipe today to hopefully inspire a future tasty lunch for you!
The Ultimate Veggie Sandwich Recipe
- 2 slices of bread {I loved this squaw bread}
- Honey mustard
- Avocado mayo
- Cucumbers
- Tomatoes
- Shredded Carrots
- Thinly Sliced Red Onion
- Avocado
- Cheddar Cheese
- Sprouts

Spread honey mustard on one side and avocado mayo on the other.

Top with ingredients.

I love this sandwich, but I also thought I would try some other veggie sandwich recipes! Especially since it has been so hot lately, not standing over the stove sounds appealing! Do you love veggie sandwiches too? What do you normally put on it? One of my other favorites is this Roasted Eggplant and Bell Pepper Sandwich with Garlic Aioli. It’s slightly more involved than this recipe above but absolutely incredible! I’ve actually been craving it lately and luckily I have some eggplant to use up!
