Hi ladies! I hope you had a nice weekend. Now that July is in full-swing it really feels like summer around here. Which is why I’m excited to share my new favorite summer recipe. I’ll be honest with you…normally I’m not a big spinach salad fan. I know it’s good for you and I don’t mind it steamed or in smoothies, but in salad form, it’s not my favorite. Or so I thought! My mother in law made this salad for the 4th of July and I was blown away. It tasted absolutely amazing and we all loved it so much {Augustine included!} that I made it again the next night. I think this is probably the best spinach salad recipe, so even if you’re not the biggest spinach fan, give it a try. We’re planning on making this salad all summer long!
The Best Spinach Salad for Summer
- Baby spinach
- Feta cheese
- Red onion diced
- Toasted almonds
- Blueberries
- Strawberries
- Equal parts olive oil and balsamic vinegar
- A little spicy brown mustard
- A little honey mustard
- Salt and pepper

Mix the salad ingredients together in a big bowl.

Mix all of the dressing ingredients together.

Toss the salad and serve!
Feel free to swap in any of your favorite ingredients, too if you like! I wasn't able to find pomegranate seeds when I shot these photos but that's the only other thing my mother in law included that I didn't have.
I think it’s officially that point in the year where it is just too darn hot to cook every day {btw here are 10 great no heat recipes!}. I love making up a big batch of pasta salad or salad that we can eat for a few meals without having to turn the stove or oven on.
I think this spinach salad does the trick for me because it is so favorable, full of fresh ingredients that scream summer, and you don’t have to follow too specific of a recipe. I estimated my measurements for you, but honestly, you could make this entire recipe to taste. Easy summer recipes are my favorite anyways!
You could also alter this recipe however you see fit. You could swap blackberries in if you aren’t a blueberry fan or could add walnuts instead of almonds. This recipe couldn’t be quicker or easier to whip up! Seriously, all you have to do is mix all the salad ingredients in a nice big bowl and then add the yummy homemade salad dressing!
Also! If you’re vegan or aren’t a dairy lover, all you have to do is not add the feta cheese to make this a recipe vegan friendly spinach salad!
