The 4th of July is just a few days away and I’m sure I’m not the only one heading to a bbq picnic. Whether it’s at your house, or someone else’s, a good side dish is a must! Bonus points if it’s easy to put together AND healthy! This one I’m sharing today is so good and it includes a surprising combo I think a lot of people would love! Easy Side Dish Recipes for the 4th
This recipe is actually borrowed from the Tone It Up Meal Plan. It’s called the “Beat the Bloat Beet Salad.” Even though it’s healthy, it’s incredibly delicious. I never would have thought to shred raw beets before but it’s a great way to get in those nutrients. The beets taste amazing with the carrots and the apple and I love the crunch from the sunflower seeds. One really cool thing about this salad is that the beets change the apples to a pink color too. It’s a really gorgeous salad– whether you make it for a summer bbq or just meal prep it for weekday lunches! If you try this beet salad, you’ll have to let me know what you think! - 1 cup shredded beet
- 1 cup shredded carrot
- 1 apple diced
- ¼ sup sunflower seeds
- 1 lemon juiced
- 2 Tbsp. olive oil
- Pinch of salt

Combine all ingredients in a bowl and toss together. Enjoy!
